The Middleware Kitchens

imageWhen first registered with Carmarthenshire County Council, our domestic kitchen was assessed by the local environmental health department.  As the business expanded however, it became aparant that we needed more space and bigger ovens.  We therefore took the decision to use what had been our store room in half of our attached garage as a new kitchen.  The store room had been designed with this in mind and an access hatchway alongside the door from the corridor was readily opened to provide natural lihght into the store room.

The kitchen is equipped with two large Falcon ovens, one with a four burner top and the other with a Bullseye.  We also invested in a commercial dishwasher, a series of stainless steel tables, stainless steel sink and a counter top refrigerator to increase the versatility for food preparation.  Recently, we also moved from domestic refrigerators to two commercial refrigerators due to the development of inconsistent temperature control.  The new refrigerators are in a different league when it comes to maintaining a consistent temperature.

Both the commercial and domestic kitchens remain registered with the council as the domestic kitchen houses a four-door Aga, which is ideal for baking our home made rolls.
