  • Baked stuffed nectarines

    Nectarines are a special fruit eaten at any time. This sweet takes them to a new place by splitting then and removing the stone and replacing them with a stuffing of Amaretti biscuits, dried apricots and extra pieces of nectarines and topped with baked almonds.

  • Blueberry, almond and mascarpone tart

    This is an exciting new recipe that Viv recently came across. It will get its first outing tomorrow lunchtime. Hopefully, the team will be able to find a few minutes to get some photos of the cut surface.

  • Chocolate and malt mousse cake

    This is one of the sweets we first tried with the family for Christmas 2016 and in the words of one of us, “It’s yummy.”

  • Chocolate and nut brownie

    If you love brownies, you will enjoy our offering, which is made with walnuts and served here with fresh raspberries and a raspberry coulis.

  • Chocolate dessert

    The recipe we use for our chocolate cake slice is also the basis of our chocolate dessert, which is served in different ways. Here smothered in chocolate and served with fresh raspberries and a raspberry coulis.

  • Divine lemon pots

    The name says it all but that is the name we got when we found the recipe and while these look very simple, the flavours are wonderful. Additionally, not a particularly heavy sweet so if you have had a filling main course, these offer a light dessert to follow.

  • Ferrero Rocher hazelnut cheesecake

    Everyone knows the Ferrero Rocher range of chocolate treats, often given as a gift at Christmas. It will come as no surprise that this cheesecake has an indulgent taste to it with the cheesecake mix that has crumbled Ferrero Rocher chocolates in the mix, a rich chocolate hazelnut topping with crushed hazelnuts and individual Ferrero Rochers arranged around the edge as the photo illustrates.

  • Hot chocolate marshmallow pudding

    This could alternatively be titled, “Death by chocolate.” A very firm favourite at the Ty Canol Gardens annual Bonfire Party on the two occasions over the years that we have served it

  • Lemon layer slice with raspberries

    We first tried this new sweet at the Ty Canol Gardens Bonfire Party in November 2016 before offering at subsequent corporate events. This sweet layers butter biscuits with mascarpone based filling with lemon zest and curd and then topped with a meringue and mascarpone topping and the raspberries added on top. Served with or without cream to taste.

  • Lemon tart

    A delightfully light sweet, here with slices of fresh strawberry and dots of lemon curd. Served with fresh cream to taste.

  • Mango and passion fruit cheesecake

    This one went down a storm when we recently served it for a wedding. We found that we could not get it out fast enough. The guests simply loved it and although there were other sweet items on offer, on this occasion the buzz seemed to go round the room and suddenly it was the flavour of the moment.

  • Mousse filled chocolate nest

    These are a sweet delight. Served with a raspberry coulis and a dusting of chopped nuts

  • Raspberry and white chocolate cheesecake

    A favourite with our cheesecake lovers, due undoubtedly to the rich flavour added by the white chocolate. Raspberries are stirred into the cheesecake mix as well as topped with fresh raspberries.

  • Red fruit salad

    Fresh fruit salad but with a twist – this one uses only red berries and fruit and as a result, always looks very pleasing on the eye and tastes wonderful.

  • Rhubarb and pistachio slice

    Served usually with custard, this great looking pie was a real hit not only with those who had the pleasure of tasting but also our Facebook audience who were rally taken with how good it looked.

  • Salted caramel Pavlova

    Our salted caramel Pavlova was something we had never conceived until we were planning an event to bid farewell to two colleagues from Viv’s husbands work. His secretary when planning the event with us wondered if we could do this sweet dish. Viv, of course, said she would be delighted to give it a go and produced her first such Pavlova for this event.

  • Strawberry and white chocolate fool

    Everybody loves a fool – that light fluffy taste, here with white chocolate.
