Fillings

While we show some of our fillings with either our home-made rolls, open rolls or sandwiches, generally any filling can be used in either rolls or sandwiches.  The preparation varies, with the fillings for sandwiches being more finely cut.

  • Barbecue chicken with onion relish and cucumber salad

    The Barbecue flavourings available to purchase without smoke is what we use to try and create that summer BBQ taste. We think we achieve it by combining with the other textures and flavours. We have not had a customer disagree.

  • Egg mayonnaise and cress

    A staple of the standard ranges that many caterers will include, it is included because it remains a firm favourite for many people and is regularly requested. We are here to meet the needs of our customers; if this is one of your favourites, you are always welcome to request it. Shown here on the right with Mexicana cheese on the left

  • Egg mayonnaise and fresh tomato

    A variation on the Egg Mayonnaise with cress, shown in our listings in a sandwich.

  • Fresh salmon with mayonnaise and cress

    Fresh salmon, cooked on our premises and then added to your sandwiches or rolls.

  • Ham salad

    Our ham salad filling is at the 12 o’clock position and shown here as part of a selection of fillings that will suit everybody but also the gluten intolerant

  • Italian herbed chicken with chilli and tomato relish

  • Mexicana cheese and salad

    Mexicana cheese is described by its manufacturer as the cheese that “bites back” and is a firm favourite with many of our customers. In the photo here shown on the left, with our Egg mayonnaise on the right. The cheese uses cheddar as its cheese base, to which is added peppers and chillies to ensure that extra bite.

  • Pastrami with apple ale chutney and salad

    Essentially, a very tasty beef filling, here in a roll but as with all our fillings, we will offer in sandwiches as well. There are some really tasty chutneys to be had locally and we have tried many of them to add to our meats and cheeses.

  • Piri-piri chicken with onion relish and tomato

    The piri-piri chicken is at the 6 o’clock position and shown here as part of a selection of fillings that will suit everybody but also the gluten intolerant.

  • Roast beef with horseradish

    A classic combination of roast beef served on a mild horse radish sauce (we use horse radish with mayonnaise so that the flavour of the sauce is not over powering). Served here on an open roll with salad.

  • Roast beef, creamy horseradish and lettuce

    A very British tradition: roast beef and horseradish sauce, here served with a little salad.

  • Smoked salmon with cream cheese

    Open rolls can look particularly attractive with pieces of smoked salmon rolled and presented as here on the cream cheese with a salad including sliced red pepper. However, like all our flavours, can be presented as a filled roll or sandwich.

  • Tandoori chicken salad with apple and ale chutney

    Middleware catering uses a variety of different spices to enhance the options we can offer to our customers.

  • Tikka chicken chilli tomato relish and tomato salad

    As we have illustrated before, we will vary the flavours in our fillings to offer different tastes.

  • Turkey and cranberry sauce with stuffing

    This could alternatively be called Christmas Dinner in a roll or sandwich and is very popular around Christmas and the New Year. Indeed, as we approach Christmas, we find that our regular customers remember this one and request it in their buffets.

  • Welsh dragon cheddar cheese with pickle and tomato salad

    An example of a cheese filling with added flavours and textures. We generally choose to use a Welsh cheese where we can; this from South Caernarfon Creameries

  • Wensleydale and cranberry with salad

    This s a Wensleydale cheese with cranberries served with a cranberry relish and salad, here presented on an open roll. This we often include in Christmas themed buffets as offers a complimentary filling/topping to serve alongside turkey with cranberry.
