There was something very special about this dish when we served it at a wedding. This is not for every couple as it relies on guests carving the lamb themselves at their table. For the right wedding or other special occasion, this can be perfect. Our staff really enjoyed delivering these: every time they put a loaded slate on the table, the guests went, “Wow!” A very satisfying sound for any caterer. This is a slow roasted shoulder in a barbeque sauce, served here with sections of chicken breast to ensure there was a meat for everyone. The carving is easy; the meat falls off the bone.
