We continue to add examples of dishes as we get opportunities to photograph examples.
- Asparagus and mushroom en croute
We love en croute dishes and this is one of our vegetarian options, often served alongside meat based en croute dishes with salads.
- Barbequed shoulder of lamb
This is a slow roasted shoulder in a barbeque sauce. The carving is easy; the meat falls off the bone. Served here for a wedding.
- Cannelloni
Cannelloni pasta tubes can be filled with a variety of different fillings. This cannelloni is filled with a chicken and mushroom filling.
- Chicken and chickpea Kashmiri
The Kashmiri spices were new to us until recently, when we were asked to provide a beef curry made to Rick Stein’s recipe for a private party. The flavours were wonderful,
- Chicken en croute
We love an en croute. This is our chicken en croute, which has a stuffing of leeks, sweet corn, parsley and chives, bound together with egg and breadcrumbs.
- Chicken, pine nut and pesto lasagne
The traditional meat in lasagne is of course beef but that doesn’t stop us offering other meats and vegetarian options. This is a delightful recipe with the added texture of pine nuts and the pesto sauce as a slightly different flavour.
- Hot southern chicken
This casserole dish uses chilli to give the hot element with tomatoes, mint and coriander to give the flavour.
- Individual Salmon en croute
As an alternative to a salmon en croute as a sliced dish from a centre-piece, we thought it might be better to serve the en croute as individual parcels. This means we can offer this dish for smaller gatherings.
- Italian chickpea casserole
Usually served with Basmati rice, this is a spicy casserole of chickpeas, new potatoes, spinach, red onion, tomatoes and herbs with chillis the principle spice. Suitable for vegans as well as vegetarians.
- Italian stuffed courgettes
The courgettes are halved lengthwise and stuffed with breadcrumbs, pine nuts, spinach, red onion, vine tomatoes, chickpeas and herbs (which include parsley and mint).
- Pulled pork
Pulled pork has to be cooked for many hours and then gently pulled apart. A lovely moist dish because of the way we prepare the meal and enhanced with the barbeque sauce.
- Spicy vegetable dhal
We have a number of vegetarian curries in our repertoire but this dhal is a favourite of ours and many of our customers and is therefore not uncommonly requested.
